The ligurian
extreme west end, so-called "Riviera dei Fiori", is not only the sea, beautiful
and tepid even in the winter, or the coast with its nightclubs, theaters,
festivals, casinos.......
In fact, a few kilometers in the inland are enough to discover valleys crossing
one another, now sweet now steep slopes, fresh air, scented of grass and woods,
all the fascination of an ancient world arrived up to now as for a miracle.
So you will see crops bounded by old dry stone walls, olive trees and vines; and
behind the next turn, a medieval village clinging to the mountain slope, its old
stone houses leaning to each other, cobbled alleys called "carugi", bell towers
of little churches, old oil mills, crumbling castles and guard towers.
It is an ideal place for walks in the country and for bicycle rides, for the
peaceful ones with the family as for the true "biker's" hardest ones.
And after the strain, is there
anything better than taste Ligurian cooking, maybe under a scented pergola in
some typical "trattoria"..... It is a poor cuisine, which exalts all products of
the land and combine them with ancient wisdom; it owes much of its taste to
spontaneally growing aromatic herbs like thyme, rosemary, marjoram, laurel,
oregano, and to the world famous basil of "pesto". This is the secret of
inimitables dishes like the "torta verde" (most villages have a special recipe
for it, with different ingredients as potatoes, beet greens, courgettes, pumpkin,
artichokes....); or again like the Apricale's "barbajuai", sort of fried ravioli
stuffed with rice, cottage cheese, herbs and courgettes; and more, the stuffed
vegetables, the home made ravioli, the rabbit cooked "alla ligure" with the
small but very tasteful olives called "Taggiasca", growing only in this area,
and the "brandacujun", typical course made of dried salt cod, potatoes, olives
and capers.
All this with the seasoning of the superb "extra virgin DOP" olive oil and
accompanied by the "Rossese di Dolceacqua", a full bodied red wine, or by the
whites "Vermentino" and "Pigato"
